Raxidan cooks up a *mean* bowl of “pulled” noodles, a traditional Uighur dish. The vegetarian broth consists of tomatoes, red onions, hot pepper, salt, & water. Delicious. While Xinjiang is famous for its roasted lamb specialties,
these ingredients, along with the flour, make up 95% of my friend’s family’s meals – served up in a variety of tasty ways.
Here in Xinjiang, the noodles are “pulled” into a chewiness that satisfies the hungriest of appetites and the finickiest of noodle connoisseurs. ‘Mampar’ is the Uighur name, though its Mandarin translation equates to “soup meal”.
The name of the song is ‘Ana’, which means “mother” in Uighur. I put this clip together to honor the love that Raxidan works into the food to feed her family every day, which they also shared with me during the 5 days when I spent visiting them. Here’s to Raxidan! And real food!
